Spanish term or phrase: patriarcado
Biog re chef Luis Irizar. 'Patriarchy' does not seem the right word to use here. Any alternative suggestions would be gratefully appreciated. British English.

Toda una vida dedicada a la cocina. Es protagonista en todos los tiempos y ámbitos de nuestra cocina. Comenzó trabajando en el restaurante familiar, después en el hotel María Crsitina de la misma ciudad y a partir de ahí empezó a viajar, formándose en Londres y París. Abrió su propio restaurante, Gurutxe Berri (Oiartzun), con el que fue pionero en tener una estrella Michelin en Euskadi (junto con Casa Nicolasa) y con el que inició su **patriarcado** en la cocina vasca.
Conocedor profundo del recetario de su tierra y de la cocina internacional, hace más de 40 años abrió una escuela, con lo que se convirtió en el “maestro de maestros”.

Explanation:
Although, "patriarchy" is the literal translation of this term, and a "patriarch"is also considered the founding father of something, I believe that you seek an alternative word.

To have tenure indicate one who is experienced, wise and skilled in a certain profession. Through this experience the person has been granted tenure and now is respected as an expert in the field.

I think any of these words would do.

'patriarcado' here is just an over-poncy (in my opinion) way of saying he is very important in the Basque culinary world.

Explanation:
"...began his ascendancy in the world of Basque cuisine."

A virtue of 'ascendancy' is that, while consistent with the notion of absolute domination that 'patriarcado' in this source text may be trying to connote, it is also perfectly consistent with somewhat more restrained senses of 'great eminence/influence/importance' and of 'rise to' the preceding.

Alternatives: More extreme alternatives, accentuating the sense of domination would be 'reign' or 'supremacy', both probably taking the preposition 'over'.

Explanation:
I think 'doyen' is the right register. There are several references to the 'doyen of English cookery' on Google, but opinions seem to vary as to whether this is Delia Smith, Keith Floyd or Mrs Beeton.
