These days, you can get cabrito in more restaurants than Jenni's ref would lead you to believe, but it is true that the piece is from not such a young animal, so we need the lechal to emphasise that it's a tiny wee thing that the cutlets come from - the meat will be very pale. It isn't necessarily still suckling, but should have been milk-fed. In contrast, the roast cabrito you get in good "hornos de asar" will be a reasonably sized piece and the meat will be darker, although still not v dark. |
