A little help with the below, please:

Un termómetro indicador de la temperatura superior del aceite, con esfera para lectura local y con la leyenda "TEMPERATURA DE ACEITE", con punteros de arrastre, ajustables, que muestren la indicación máxima desde el último ajuste."

My attempt:

A top oil temperature indicator thermometer, with a dial for local reading and labeled “OIL TEMPERATURE”, with re-settable maximum oil pointers that display the maximum indicators since the last setting.

sliding pointers

Explanation:
This is my best guess. As the temp rises, it drags these pointers up with it, and then as the temp drops, the pointers stay put, thus indicating what the max oil temp was since the prior re-set.

A thermometer indicating the peak/top/highest oil temperature, with a local reading dial labeled "OIL TEMPERATURE," with readjustable sliding pointers to indicate the highest reading since the prior re-set.

Please note: you must to put the comma INSIDE the quotation mark, as I have shown-- that would be the proper form.
