It's about health and environmental issues. In this context:


"Cuando más avanza la ciencia, menos saludables son nuestros hábitos"

This is how I see it, for the moment:

"The more science advances, the less healthy our (life) habits are (become)."

As you said, the statement means that our habits (almost certainly referring to lifestyle, etc.) become less and less healthy as science moves forward.

I think the original was probably "Cuánto más avanza la ciencia, menos saludables son nuestros hábitos"

Cuando/cuándo = when, cuanto/cuánto = how much

The more science advances, the more we fall into unhealthy lifestyles


Explanation:
This is tricky, as the original in Spanish seems to propose that our un healthy habits are a direct result of scientific advance. (I'm certain that the readers understand that this is not the assertion based on the larger context.) I suggest using the word "lifestyle" as there is a stronger correlation between scientific advances and lifestyle than between scientific advances and unhealthy habits. As with any change, this would be better proposed to the client than just slipped in without saying anything.
