SPAIN: Really 2 doubts here. Does "en conserva" always mean canned; and how do we say "al natural" in English. I usually understand it as "not pickled"...

This may well be no help at all, but here's a page headed "Las conservas: espárragos al natural" where you add salmuera, put them in "frascos" (which are surely jars), and then boil them for two hours. I have to say I would call this "preserving". http://ileyconservas.tripod.com/id83.html
And here's another, very similar, again with brine and again cooked in closed containers (tarros this time). The latter is the "conserva" bit, it seems. You have to check the vacuum seal afterwards. See pp. 15-16: http://sallavor.org/resources/conservacion-alimentos.pdf
The method reminds me of my Manchegan mother-in-law doing rabbit en escabeche.
I think you'll have to go for preserved in that case. Usually it is in jars, but you need to cover all possibilities. I have a jar in the cupboard, which is in brine. You may be able to get it in plain water (probably with citric acid added) but I'm not sure.
is usally "salmuera". "Al natural" would usually mean no brine, no oil etc, maybe "natural" is the best option, although nowadays I associate that with "healthy" food advertising.
suggest "preserved" but I associate this with jams, chutneys or marmalade, not vegetables. That's why I'm posting the query. I know it's in the glossaries already so do not need reminding/nagging.

Nevertheless, I still think that most of the time, citric acid or any other mean of preservation/brine is still considered as "al natural" which is why I agree with Gilla
but, if you want your asparagus really "natural", then do not add anything to your description
