I don't know if the restaurant in Valencia was the one pointed out by Deborah, but that menu was so interesting that I've noted the website in my travel file.
I suggested parfait to the agency and they were happy with that. I know it may not be what it is but they didnt know either. I guess I will have to dine at the restaurant to find out! Thank you all for your suggestions. 4 KudoZ points were awarded for this answer

I don't think this is really all that likely, but "nubes" is the name given in Spain to marshmallows, and I've found smaller, button-sized ones used in sundaes and the like. I'd go with Jenni's suggestion of requesting a bit more info from the client. If this does have anything to do with nubes, then perhaps something like "Marshmallow dream" would work.
in this case, since "Copa Nube" is not the official name of a dessert such as "Melba". I'd say, without knowing the ingredients all you can do is invent an equally creative name. Isamar's option is a good one: only that it MIGHT not be light. I imagine something piled up with cream or ice cream.
