Interesting! On the Internet there are 415 references to "God created Man in His image and likeness" (which I have heard), but 8,100 (i.e., 7,685 more) to "God created Man in His image" with no "likeness" -- which I have heard more often.
When you think of it "likeness" may be more than mere appearance, so you could say:
"whose actions are playing out the image and likeness of..."
