agree  delveneto: Your answer is good, but I've seen "settle the animals down", take a look at it.

  -> Yes indeed! Thanks!

agree  James A. Walsh: I think "settle the animals" works best here. And I don't agree with "settle the animals down"; that suggests the animals are somehow out of control or something, which is not the sort of behaviour I would expect of farm animals.

  -> OK! Thanks James! In fact domestic animals and children (I have plenty of both) tend to go berserk in the evening, probably burning off surplus energy :) Probably does not apply to cows, though.

Herd/Load the animals

Explanation:
Para Load encontre esto en un requisito de trabajo para Pastor de ovejas:

Duties may include feeding, watering, herding, grazing, castrating, branding, de-beaking, weighing, catching, and loading animals.

Pero puede significar tambien cargarlos dentro un camión o also similar (load).

Herd: es mas bien conducir los animales, mas que nada ovejas.

agree  gsloane: "round up" the animals, ie get them ready to be brought within their grazing areas for the night which is usually fenced off so that they don't bolt or run away.

stable the animals

Explanation:
If the phrase refers to accomodating the animals in their stalls, then this is what it means. The complete text may provide enough context to confirm whether this interpretation is correct.

make sure the animals are all where they need to be

Explanation:
I know it sounds wordy, and perhaps even awkward, but assuming that reference is being made to a variety of animals, I don't think a single verb works.

Suerte.
