For "los alimentos que disparan los índices de colesterol" I would have said food or foods that make cholesterol levels shoot up/ shoot up cholesterol levels because it is in keeping with the combat theme and the word "disparar".

One of the frustrations people face when attempting to lower their cholesterol is the fact that while too much fat and cholesterol in the diet will shoot up blood cholesterol, too little fat and a poor balance of fat to carbohydrate and protein in your diet can also negatively affect your cholesterol level.
