Las carnes cocidas al calor seco y con productos de tostación son más difíciles de digerir; por un lado tardan más en su digestión y por el otro aumenta la secreción de jugos gástricos. De allí que en caso de padecer problemas gástricos, la cocción al horno es más beneficiosa que a la parrilla o a la plancha.

meat exposed to air while cooking

Explanation:
dietitians warn against foods roasted in high-oxygen environments (e.g barbeuces) because the tasty 'toasted' exterior is actually charring that contains unhealthy chemical compounds. (I think these may be the 'productos de tostacion' referred to, rather than bastes or other cooking ingredients - would need to see more context).
