Capacidad de unirse a los metales: El aumento de contenido de fibra en la dieta determina una pérdida mayor de minerales, ya que sodio, potasio, calcio, agnesio, se unen a ella y se despiden a través de la materia fecal. Otras sustancias presentes en la fibra, como los ácidos fítico y oxálico, actúan especialmente capturando el calcio. En la mayoría de los casos estas pérdidas no son significativas. En casos particulares en que se conoce un déficit mineral, deberían separarse adecuadamente las ingestas, y evitar el consumo de fibra junto al aporte del mineral que se necesita incrementar.
