As for what that particular suspension (jalea) happens to be, I've come up with several possibilities. Do any of these fit your larger context? (1) Gelatin In the manufacture of marshmallow meringues and grained marshmallow, crystalization of the sucrose is deliberately induced by altering the ratio of sugar to glucose in the formulation and sugar crystal seeding techniques to give the characteristic texture of this aerated product type. The degree of aeration and setting time is dependent on the type and grade of gelatin used together with its concentration.
