...pizza dough, like bread dough, has to be aged and fermented properly to produce a puffy bread like crust, otherwise you get the commercial pizza chain flat hard crusts.

think al punto refers to time in oven effecting quality of base-too long and it goes too hard/crispy,too little and its too soft/moist,etc.

  -> I admit that there is some back-up for "cooking" pizzas on Google, but the back-up for "baking" pizzas seems more convincing to me. I would most probably prefer those pieces ;-) //Sorry if I am being too "traditional" about it
