Sí, Lydia y su abuela tienen razón apurar puede significar "examinar atentamente", así lo dice tmb el DRAE.
Apurar en esta frase tien un sentido "activo", de movimiento de ir de un lado para otro.

neutral  patricia scott: Teju, está claro que es figurativo - es sólo que para mí apurar aquí es un verbo que indica actividad y en cambio nestling indica pasividad. Lo siento, pero sigo pensando que es precioso para describir la situación de la ciudad perono la del narrador.

Explanation:
Adam, you will probably find the best way to say it in English. I only want ti be sure you understand the meaning and the "feeling" of the text.

Even though "apurar" is usually used as go quickly, go faster (please see the DRAE 4.) and it is not usual (maybe), it maybe "old-styled" as Lydia says, but the first option (1.) for the DRAE is "looking for". Apurando also gives the idea of looking for but not just looling for but with urgence, quickly look...

Apurando la ciudad as apurando un vaso de agua antes de salir (he drank and left) is quickly going through the city. (My understanding).

So, I would say "Going through the city that narrows among the cliffs that surround it, we look for the Church..." (literally)

Or, I undersand and would prefer:

Quickly looking for or seeking a city that gets narrower between the cliffs that cercle it, WE FIND the church

(This turn around looks better for me -of course after the corrections on your side / language)
