The sarmientos are vine clippings or prunings (often made up into bundles which are great for real barbecues, also splendid kindling), but here they can be any old thinnish stick. Vine twig sounds a bit flimsy.

Asker: Yes "cutlets" seems best. I have just been reading about "zarajos" - not really my thing but apparently quite a delicacy!

Explanation:
"Cutlet" might be more appropriate than "chop", but it doesn't necessarily have to be tiny, for this first part of the sentence refers to a "lamb". I'd also choose "grilled" instead of "barbecued", I've had too many BBQ's cooked on some kind of an oven dish with electricity or gas.
