Spanish term or phrase: contundencia (in terms of food)
La cocina de la provincia de Cuenca se caracteriza por su variedad, contundencia, sobriedad, sabor intenso y gran valor energético, fruto todo ello de su origen pastoril y la utilización de los productos de la tierra.

So far I have "forcefulness" - not really right with cooking/food. Any suggestions?

Explanation:
I don't know about other countries, but at least in Chile, when something is "contundente" it means it's filling and hearty. The kind of food that will not leave you hungry. It does not mean "strong flavoured". Something can be "contundente" but not necessarily have a lot of flavour. Like rice and beans, which sometimes can be rather bland, but extremely fulfilling.

Oh, and I forgot to add that by "sobriedad" I think they mean that it's simple food, as opposed to say, French food. :) Not "moderation" because I reckon that would almost contradict the "contundente" bit if you see what I mean. Hope this helps! :)

Explanation:
I think you can leave that word out, because it means the same as "sabor intenso". I've eaten several times in Cuenca and the food there is quite greasy and the flavour stays in your mouth and your stomach for hours!!!
