The only information I have found for this is on (relatively) unreliable websites, "Driven partridge" seeming to be the translation. Why partridge?

so says my trusty Collins

As in "beating the pheasant, etc" which is what the beaters do to raise the birds...for the others to shoot...

according to larousse "ojeador" is "persona que ojea la caza." the person looking out for the game to be hunted. It comes from "ojo"- eye, or seeing or looking for game.

Some game goes into cover so dense that a hunter cannot penetrate it to get a shot. Such game must be driven into the open. This may be done with the help of a number of men or dogs or, as in certain parts of India, with the aid of a line of elephants. These methods are known universally as driving, or beating.

Explanation:
This is a way of hunting typical of Spain in which some men are in charge of making noise in order to make the partridge fly for others to kill them . I don´t think there is translation for this expression. Good luck.
