neutral  liz askew: Were I to see this on a menu I would say "What is this please waiter?"//Yes, but we are translating this into English, and only "style" is English:-)

  -> As Smart mentioned, Rota is the name of a place. "Urta" = 'Sea bream' and whether I saw Urta or Sea bream on the menu I would also have to ask. "Fish cooked in the local style" seemed too watered down a translation. Luckily most menus include descriptions

URTA A LA ROTEÑA: Pescado similar al besugo, pero más carnoso, guisado con mucho tomate, pimiento y cebolla. El nombre del guiso proviene de Rota, simpático pueblo gaditano del que es plato típico.
