This occurs in headings in a table which forms a quality control record relating to catering in a hotel.
It occurs in the registro de control de servicio de desayuno: "Remontes correctos".
and in the registro de control de servicio de desayuno/almuerzo/cena:- "Control remontes"

I think they must be referring to the clearing the tables and setting them again... it doesn't correspond to any of the DRAE definitions I can find.
