Is there a special way of saying this or is it just "standard board windsurfing?" Thanks.

David, there´re different ways, all correct: windsurf/windsurfing on/with standard board // standard board windsurf(ing), but the latter is a category in competitions. It´ll be your choice.
As regard the sail there´re also several options: light wind sail; light-wieght sail; light-air sail and finally and safer LIGHT SAIL.
If you "surf" the web you´ll find them all!!! SUERTE!!!!
