desencierro de las vaquillas
releasing (of young heifers) to run through the streets

Explanation:
In many Spanish towns and villages, the local "fiesta" often includes the releasing of young heifers to run through the streets. The local youths (or not so youthful) then run ahead or alongside them (thus demonstrating their ability and valour, I guess).Similar to what happens in the fiestas of San Fermin in Pamplona (though bulls run through the streets there, before the bullfight in the bullring).

disagree  agtranslat: That with San Fermín is the encierro. Desencierro is just the opposite.
