Yo no lo traduciría. En general, platos con nombres tan regionales se deberían dejar así. Si un turista tiene curiosidad por probarlos, tiene que pedirlos por ese nombre, pues si no, nadie entendería qué es lo que quieren.
Estuve revisando lo más que pude en Internet y no logré encontrar algún sitio que me explicara en qué consiste la "postura". Si quieres saber qué es, tal vez te podrían informar en la Embajada, si es que tienen buena voluntad para preguntar entre sus propios nacionales.
