Spanish term or phrase: botella de guarda
my sentence:
En boca es suave, redondo, casando inmejorablemente sabores y aromas con su bien ajustada tanicidad fruto de su largo reposo en botella de guarda.

What I have found on the net:
La crianza del vino en botella se realiza para los vinos de guarda o de crianza, es decir, vinos que no se embotellan para su consumo inmediato sino que, tras haber sido fermentados en barrica, sufrirán un proceso de crianza en la botella durante un tiempo tras el cual podrán ser consumidos.

This explains it, but gives no hint as to how to say it in English. My Larousse encyclopaedia of wine is strangely quiet.

... when trying to guess whether an aging bottle has aged enough, the temperature has to be taken into acccount. A wine at 70 degrees may be evolving twice as fast as a wine at 58 degrees.
