"Hunting art" sounds strange. Would perhaps just "art" work, since the context of hunting is clear from the text.
In the end, I went with my original inclination of simply "art". Maria's suggestion was interesting, but I think a bit obscure--no point in sending people to the dictionary to look up a word unless it is absolutely necessary. I don't think "art form" works in reference to an activity (i.e., falconry) that is, when all is said and done, more a "sport" than an "art".

The art of hunting refers more to the techniques involved in successful hunting. Does it mean that, or art depicting hunting?
