Explanation:
Patrón es un término coloquial del español rioplatense para dirigirse a alguien. Es un término utilizado más bien por la clase baja. Yo propondría "monsieur" o directamente no pondría nada.
El qué dice no es otra cosa que comment allez-vous? o comment ça va?
También se dice "qué cuenta", "qué hay de nuevo".

Habiendo leído la pregunta de \"tarados\", me doy cuenta de que se trata de alguein que entra a la habitación. Traduciría \"pardon, monsieur, je vous ai apporté le/votre café\". Esta versión me parece más adecuada.
