Este es un postre típico del norte de España, sobre todo de Cantabria y también del País Vasco, como forma de aprovechar la leche.

J'ai vu "lait frit" sur Internet. Je ne suis pas très convaincue !

Por lo visto, no hay una traducción exacta para este postre. No sólo es típico de España, sino también de Italia, donde se le llama "fritelle de crema". En ese caso, "pudding" no estaría mal. Sugiero que dejes el nombre en español y agregues, entre paréntesis, la traducción que elijas, ya sea pudding frit o lait frit.
