Información básica
Es una sal de sodio de carmín natural, obtenida por solubilización en medio alcalino y luego secada por atomización obtenida de la hembra del insecto cochinilla previamente secada (Dactilopus coccus Costa). El principio colorante es un quilato alumínico del ácido carmínico.
Soluble en sistemas acuosos. Insoluble en alcohol.
Puede ser usado en productos lácteos, productos horneados, productos cárnicos, entre otras aplicaciones alimenticias.
