pescado de roca: pesce di roccia?

carrillera de cerdo (en catalán serían galtes de porc y en castellano se llama también quijada)
pichón asado: piccione arrosto?

No he encontrado tantas referencias en Internet. Me basé en el diccionario Hoepli Italiano-Español.

pescado de roca: pesce di roccia (ver enlace), de esto no estoy tan segura

morro de cerdo: muso di maiale

pescado con piel: pesce con le lische

carrillera de cerdo: mascella di maiale

pichón asado: piccione arrosto

No he encontrado tantas referencias en Internet. Me basé en el diccionario Hoepli Italiano-Español.

pescado de roca: pesce di roccia (ver enlace), de esto no estoy tan segura

Explanation:
Sono sicura della prima dicitura che ho scritto nella risposta e propongo termini a mio giudizio più consoni:
"Guanciale di maiale" dovrebbe sostituire mascella di maiale ed al posto di muso di solito i cuochi
dicono "musetto"
