Cette simplissime recette de poires, légère et délicatement parfumée, idéale pour clore un repas copieux, allie deux épices portugaises incontournables dans la confection des desserts : les graines d’aneth et la cannelle.
Laver soigneusement les poires. Les couper en deux dans le sens de la longueur, sans les peler. Ôter soigneusement la partie dure contenant les pépins. Mettre les poires dans une cocotte en grès ou dans une casserole en cuivre. Les couvrir avec 20 cl d’eau. Ajouter le bâton de cannelle, les graines d’aneth, la pincée de sel et un peu de sucre. Porter la préparation à ébullition. Laisser cuire pendant 10 min après ébullition. Transférer les poires dans des coupelles de service et filtrer le jus de cuisson. Ajouter le sucre au jus de cuisson et le porter de nouveau à ébullition. Laisser cuire, sans cesser de remuer à l’aide d’un fouet, jusqu’à obtenir un sirop ambré. Verser le sirop sur les poires et les saupoudrer avec un peu de graines d’aneth. Laisser tiédir avant de servir. Décorer éventuellement avec des bâtons de cannelle.

• 6 petites poires rousses
• 300 g de sucre roux en poudre
• 1 bâton de cannelle

| Translation - English Pears in dill
Light and subtly aromatic, this pear recipe is simplicity itself and is ideal for rounding off a substantial meal. It combines two Portuguese spices that are indispensable for making desserts—dill seeds and cinnamon.
Wash the pears thoroughly. Cut them in half lengthwise but do not peel them. Carefully remove the hard part in the middle containing the pips. Put the pears in a stoneware casserole dish or a copper pan. Cover them with 20cl water. Add the cinnamon stick, dill seeds, pinch of salt and a little sugar. Bring the mixture to the boil and cook for 10 mins. Transfer the pears to individual serving dishes and strain the cooking juices. Add the sugar to the cooking juices and bring to the boil again. Stirring continuously with a whisk, continue to boil the juice until it is a golden syrup. Pour the syrup over the pears and sprinkle with a few dill seeds. Allow it to cool before serving. If you like, you can also add cinnamon sticks as decoration.

complete or partial tear of one or more ligaments in a joint as a result of impact. Ligaments in the foot and knee joints are very often injured through simultaneous stress and rotation, e.g. when playing football and tennis, or skiing. A torn ligament can also be caused by stress or overstretching of a joint, especially in old people.
In the case of a complete rupture, the joint is either put in plaster to allow it to heal or the ligament is sewn together in an operation. Nowadays a torn ligament is frequently treated by arthroscopy: the specialist instruments are fed into the joint through an endoscope under local anaesthetic in order to repair the ruptured ligaments.
