CARATTERIZZAZIONE SENSORIALE
La qualità sensoriale della caciotta misto pecora è stata rilevata utilizzando un panel di assaggiatori esperti di analisi sensoriale e di formaggi; le persone coinvolte hanno partecipato a concorsi sui formaggi di carattere locale, regionale e anche nazionale, e abbinano la loro esperienza con le conoscenze sulle tecnologie di produzione.
Queste prerogative, hanno permesso di ottenere un giudizio di qualità generale sui prodotti, vincolato alle conoscenze tecnologiche dei processi e alle richieste di mercato, difficilmente raggiungibili impiegando gruppi numerosi di consumatori.
Al gruppo di valutazione è stato chiesto di giudicare le caratteristiche sensoriali dei prodotti, attraverso l’assegnazione di un punteggio di qualità; la somma dei valori attribuiti fornisce un punteggio totale, fino ad un massimo di 100 punti, che è di per sé un indicatore della validità del prodotto nei confronti di “consumatori specializzati”.
Gli assaggiatori hanno utilizzato una scheda, derivata da quella utilizzata da O.N.A.F. (Organizzazione Nazionale Assaggiatori Formaggi), nella quale viene attribuita maggiore importanza alle caratteristiche di odore, sapore, aroma e struttura alla masticazione.
Sono state raccolte, inoltre, le eventuali note riguardanti gli aspetti sensoriali negativi.

SENSORY CHARACTERIZATION
The sensory quality of caciotta misto pecora has been assessed by a panel of tasters experienced in sensory analysis and in cheeses; all those involved took part to contests on cheese at local, regional and national level and match their experience with their knowledge on manufacturing processes.
These features, unlikely to be achieved by surveying different consumers’ groups, allow to determine the overall products quality, which is bound by the technological know-how of production processes and the market demand.
The assessment panel has been asked to evaluate the sensory characteristics of the products, by assigning them a score concerning their quality; its sum makes up a total score, up to 100 points, which already shows how valuable a product is in front of “skilled consumers”. The tasters used a card, similar to the one by O.N.A.F. (National Association of Cheese Tasters), in which is attached high importance to those characteristics relevant to smell, flavour, taste and the structure you perceive when chewing it.
They also collected all possible remarks concerning negative sensory aspects.
