2 T olive oil
2 garlic cloves, crushed
1 lb. shelled and deveined fresh (or frozen**) shrimp
1 c white wine (dry chardonnay works well)
1 16oz. can tomatoes (or you can use fresh cut)
¼ c oil green Spanish olives (jalapeno stuffed work great too!)
¼ c parsley
¼ tsp salt
Dash Tabasco or crushed red pepper flakes to taste (optional)
In a large skillet combine olive oil and garlic.
Cover over a medium heat, stirring occasionally until garlic is golden, but not browned.
Add shrimp and sauté just until they lose their translucency and turn pink. Pour in wine.
Increase heat to high and boil 5 minutes.
Remove shrimp with slotted spoon and set aside.
Continue to cook wine until reduced by half.
Add tomatoes, olives, parsley and salt; cook sauce 5 minutes more. Return shrimp to skillet and heat through.
Blend in Tabasco or pepper flakes – if desired.
Toss into pasta.
Makes 2 “healthy” portions.
**If using frozen shrimp, do not thaw.
| Translation - Spanish Pasta con camarones y aceitunas
2 cucharadas de aceite de oliva
2 dientes de ajo machacados
1 libra de camarones frescos (o congelados**) sin cabeza y desvenados
1 taza de vino blanco (un chardonnay seco va muy bien en este plato)
1 lata de tomates de 16 onzas (también puede utilizar tomates frescos)
¼ taza de aceitunas verdes españolas en aceite (¡las aceitunas rellenas con morrón también quedan muy bien!)
¼ taza de perejil
¼ cucharadita de sal
Una pizca de salsa Tabasco, o escamas de pimiento rojo machadas al gusto (opcional)
En una sartén grande, coloque el aceite de oliva y el ajo.
Cocine a fuego medio con la sartén tapada, revolviendo ocasionalmente hasta que el ajo se dore, pero no demasiado.
Agregue los camarones y saltee hasta que dejen de verse translúcidos y se tornen rosados. Vierta el vino.
Suba el fuego a fuerte y deje hervir durante 5 minutos.
Retire los camarones de la preparación con una espumadera y reserve.
Continúe cocinando el vino hasta que se reduzca a la mitad.
Agregue los tomates, las aceitunas, el perejil y la sal. Cocine la salsa durante 5 minutos más. Vuelva a colocar los camarones en la sartén y caliéntelos.
Si lo desea, coloque una pizca de salsa Tabasco o escamas de pimiento.
Vierta sobre la pasta.
Rinde dos porciones “generosas”.
**Si utiliza camarones congelados, no los descongele.
