Met de Anna Pavlova en Garcia cocktails en een selectie van 14 open wijnen, is de bar van Hotel Des Indes niet te vergelijken met enige andere hotelbar. In samenwerking met het restaurant is een exclusieve selectie gemaakt voor de fijnproever, maar de sfeervolle en trendy bar is ook ideaal voor een drankje na een vergadering of op de vrijdagavond.
Het horecawezen is maître Leon van Bourgonje (31) met de paplepel ingegoten. Zijn ooms en tantes runden hotels en als kind verbleef hij letterlijk met zijn wiegje op menig hotelkamer. Na een internationale carriere in o.a. Zwitserland en op Curacao, is hij nu verantwoordelijk voor de selectie dranken en wijnen in hotel Des Indes. Hij reist door heel Europa en gaat regelmatig proeverijen langs om zijn gasten een diverse selectie wijnen te kunnen presenteren.
“Ik hou ervan mooie producten te verkopen. Drank is een verlengstuk van de keuken. Gerechten worden voller door een goede wijn. Maar de selectie is ook gebaseerd op het nuttigen van losse wijnen aan de bar. We hebben veertien open huiswijnen. Als drie mensen hier een glas wijn komen drinken, kunnen ze ieder hun eigen smaak kiezen. Hoe ik het aanbod selecteer? Door veel naar gasten te luisteren. Ik ga nooit uit van mijn eigen smaak, maar denk zoals de gasten. Wat is exclusief voor hen?” De Rose… 2004 werd geslecteerd tot beste rose van de wereld. De persoonlijke voorkeur van Leon: een glas Spaanse Verdeccio.

Thanks to the Anna Pavlova and Garcia cocktails and a selection of 14 open wines, the bar of Hotel Des Indes cannot be compared with any other hotel bar. In close cooperation with the restaurant, an exclusive selection has been made for the connoisseur, but the attractive and trendy bar is also ideal for drinks after a meeting or on Friday nights.
Maître d’hotel, Leon van Bourgonje (31), learned the hotel and catering industry at his mother’s knee. His uncles and aunts ran hotels and as a child his cot literally stood in many a hotel room. Following an international career in countries like Switzerland and Curacao, he is now responsible for the drinks and wine selection in Hotel Des Indes. He travels across Europe and regularly attends tastings, to be able to present his guests with a diverse selection of wines.
“I just love selling beautiful products. Drinks are a continuation of the kitchen. Dishes are enhanced by a good wine. But the selection has also been based on drinking wine on its own at the bar. We are offering fourteen open house wines. When three people come here for a glass of wine, they can each choose one to suit their own taste. How do I select the range? By listening to our customers. I never work from my own taste, but I think like the guests. What will be exclusive to them?” The Rosé… 2004 was selected the world’s best rosé wine. Leon’s personal favourite: a glass of Spanish Verdeccio.
