Gone are the days when Paris offered culinary wonders on every corner. Sadly, despite the quality of the products available, the overall standard seems to be on a downhill slide that could put the city’s reputation as a gastronomic capital in real peril – especially when compared to the much more adventurous food scenes in cities such as London, New York and Sydney.
Thankfully, an increasing number of young chefs are valiantly battling this general trend – many of them working alone in tiny kitchens. Cyril Lalanne at La Cerisaie, Sylvain Endra
at Le Temps au Temps, Nadège Varigny and Guy Bommefront at Ribouldingue, Philippe Tredgeu at L’Entredgeu and Chris Wright at Le Timbre are a few of the idealists whose diminutive restaurants prove that Paris dining has a future. Christian Constant, mentor to many a Paris chef, also shows what bistro cooking can and should be at Le Café Constant, where you can taste the lack
of shortcuts in classic dishes such as lentils braised with pork and pike-perch quenelles.
The chef’s bistro has come to be known as
the neo-bistro, setting it apart from old-time stalwarts such as Josephine ‘Chez Dumonet’ and Chez La Vieille, which continue to soldier on in diminishing numbers.
If bistros are still the major genre in Paris, there is a growing number of more ambitious restaurants where the price you pay for contemporary cooking still looks reasonable compared to haute cuisine. Some of these are run by haute cuisine chefs such as Pierre Gagnaire (Gaya Rive Gauche), Guy Savoy (Atelier Maître Albert) and Joël Robuchon (L’Atelier de Joël Robuchon) in a bid to make their cooking more accessible, while others showcase the styles of former bistro chefs such as William Ledeuil (Ze Kitchen Galerie, 4 rue des Grands Augustins, 6th, 01.44.32.00.32) and Gilles Choukroun (Angl’Opéra). Most offer reasonable value
for money, though it is easy to spend €100
or more per person at haute cuisine annexes.
Brasseries have sunk particularly low, with most now run by chains – go for the historic settings, buzzy atmospheres, seafood platters and occasional surprisingly good dish (the desserts at least are usually reliable).
Like any world capital, Paris has a dizzying number of international restaurants to choose from. Best among these are the North African restaurants, though you’ll also find good Japanese, Chinese, Korean, Middle Eastern
and Italian food if you’re extremely selective.
Except for the very simplest restaurants, it’s wise to book ahead. This can usually be done on the same day as your intended visit, although really top-notch establishments require bookings weeks in advance and confirmation the day before (remember that lunch can be much more affordable than dinner). If you’ve failed to get
a reservation, try putting yourself on a waiting list a couple of days ahead, as last-minute cancellations are common.

This chapter provides an overview of business uses of wikis. The combination of simplicity, transparency and openness that wikis offer is an excellent response to the needs of today’s dynamic, collaborative, knowledge-intensive work environments. Because wikis are a very flexible communication medium, the chapter cannot offer a comprehensive list of actual and potential uses. Nevertheless, the explanations and examples given will convey the general flavour of what has been done with wikis in corporate environments and give a glimpse of the possibilities.
The chapter begins with a look at those characteristics of wikis that distinguish them from other types of collaboration software or groupware used in business organisations. We then present a picture of wiki use within organisations, both at the general level, and with more detail using a few examples. Finally, we analyse three prominent patterns of wiki use in businesses: as a tool for project and group collaboration, as a knowledge base and as a means of gathering and disseminating new information internally.

Su estudiada formulación, produce paralelamente a sus efectos de limpieza y exfoliación, hidratación y sedación, gracias a la incorporación de Liposomas Retard que aumentan la flexibilidad de la piel y de Bisabolol que calma e hidrata.
MODO DE EMPLEO: Aplicar una pequeña cantidad del producto sobre el rostro y masajear suavemente con la yema de los dedos. Añadir después un poco de agua y emulsionar el producto. Continuar efectuando el masaje durante 30 segundos aproximadamente. Aclarar luego con abundante agua, hasta eliminar completamente los restos.
Aplicar a continuación el producto de tratamiento.
Dosificación: Aplicar de 1 a 3 veces por semana.

MODALITÀ DI IMPIEGO: Applicare una piccola quantità del prodotto sul viso e massaggiare dolcemente con i polpastrelli delle dita. Aggiungere poi un po’ d’acqua ed emulsionare il prodotto. A continuazione effettuare un massaggio durante approssimativamente 30 secondi. In seguito, risciacquare con acqua abbondante, fino a eliminare completamente i resti.
Applicare a continuazione il prodotto di trattamento.
