When carbohydrates are digested in the gastrointestinal tract, they are broken down into simple sugars such as glucose. Once these sugars are absorbed into the bloodstream, they travel to the liver. Most of the body’s cells can utilize free fatty acids (FFA) as an alternative energy source; however, the brain, the retina in the eyes, and a few other
tissues can only utilize glucose for energy.
