A produção de queijo minas frescal em agroindústrias familiares é amplamente difundida no Estado de Minas Gerais associada à tradição cultural, demanda do consumidor e rendimento do produto. Os objetivos deste estudo foram avaliar aspectos socioeconômicos da produção de queijo minas frescal fabricados em agroindústrias familiares no município de Viçosa-MG e caracterizar as principais dificuldades do setor. Os dados foram levantados pelo método de entrevista in loco em 12 agroindústrias, seis inspecionadas e seis não inspecionadas A renda do produtor familiar proveniente da produção do queijo minas frescal variou de 10% a 85% do total da renda familiar, com maiores percentuais para as agroindústrias inspecionadas. Em. 83% das agroindústrias inspecionadas a renda total era vinculada principalmente à produção do queijo. Os entraves na produção formal incluíram a competição com produtos informais, baixo preço e dificuldade de acesso a linhas de crédito e, para os produtores informais incluíram escassez de matéria-prima e de mão-de-obra, variação sazonal da produção e a ausência de infra-estrutura adequada de produção. A produção de queijo minas frescal é uma atividade relevante na composição da renda familiar das agroindústrias, entretanto há necessidade de implementação de políticas públicas local para melhor estruturação do setor o que contribuirá para a sustentabilidade da produção familiar.

The production of minas frescal cheese in familiar agribusiness is widely diffused in Minas Gerais States, associated to cultural tradition, consumer demand and product yield. The objectives of this study were to evaluate socioeconomic aspects on the production of minas frescal cheese produced in familiar agroindustries in the city of Viçosa-MG and to characterize the main difficulties in the sector. Data were collected by the in loco interview method in 12 agroindustries, six of them inspected and six not inspected. The familiar producer income coming from the production of minas frescal cheese varied from 10% to 85% of the total familiar income, with biggest percentages for the inspected agroindustries. In 83% of the inspected agroindustries, the total income was linked to the production of the cheese. The obstacles on the formal production included the competition with informal products, low price and difficulty of access to credit lines, and, for informal producers, they also included lack of raw material and manpower, seasonal variation of production and the absence of adequate production infrastructure. The production of minas frescal cheese is a relevant activity on the composition of the agroindustries familiar income, however, there is a need for implementation of local public policies for a better structure of the sector, which will contribute for sustainability of the familiar production.
