Madrid has for centuries acted as a magnet for internal migrants from all over Spain, and they have brought their cuisines with them.
Nowhere else in Spain can you so easily sample the whole range of Spain’s cuisines, from simple Castilian soups and game dishes to the refined surf-and-turf meals of Catalunya. Disciples of Catalan super-chef Ferran Adrià and his Basque equivalent Juan Mari Arzak have long since created niches for themselves in the city. They bring to Madrid’s foodies the most inventive of what has been dubbed nueva cocina española (Spanish new cuisine).
