The process:
The main objective of the malting process is to break down the cell walls of the malting barley endosperm, making the starch accessible for the enzymes, also produced during the malting process. In such way, through the mashing and fermentation process, the starch can be converted into sugars and finally alcohol. Malt is a natural product, greatly contributing to the flavor profile, mouth feel and coloration of great Belgian and international beers.
The process consists of three major steps:
1. Steeping: The mechanically cleaned malting barley is mixed with water and air alternately. This step takes two days. During this time the barley absorbs the water and begins to germinate.
2. Germination: The barley is now transferred to the germinating boxes and is termed “green malt”. Here it remains for an average of 4 days, under mild conditions, continuous aeration and 100% relative humidity.
3. Kiln−Drying: After germination the green malt is transported to kilns and dried very gently for two days until it reaches a water content of 4.5%. The rootlets are then removed from the malt grains. The malt is mechanically cleaned and ready for dispatch.

Le procédé de fabrication :
Le principal objectif du processus de maltage est de briser les parois cellulaires de l'endosperme de l'orge brassicole, afin de rendre l'amidon accessible aux enzymes, également produites pendant le processus de maltage. De cette manière, grâce à la macération et à la fermentation, l'amidon peut être transformé en sucres puis en alcool. Le malt est un produit naturel qui contribue grandement au profil des saveurs, à la sensation en bouche et à la coloration des grandes bières belges et internationales.
Le processus consiste en trois étapes principales :
1. Le trempage: L'orge brassicole nettoyée mécaniquement est mélangée alternativement avec de l'eau et l'air. Cette étape dure deux jours. Au cours de cette phase, l'orge absorbe l'eau et commence à germer.
2. La germination: L'orge est ensuite transférée dans des cases de germination et est appelée «malt vert». Durant cette phase, l’orge reste en moyenne 4 jours dans des conditions modérées, une aération continue et une humidité relative de 100%.
3. Le Touraillage et le dégermage : Après la germination, le malt vert est acheminé dans des fours et séché très doucement pendant une période de deux jours et ce jusqu'à ce qu'il atteigne une teneur en eau de 4,5%. Les radicelles sont ensuite retirées des grains d’orge. L’orge est ensuite nettoyée mécaniquement et prête à l'expédition

General Network Design
The network design contemplates to have the following configuration:
1. There will be a primary and backup paths to Central Bank and Disaster Recovery Site (DRS)
2. Each path will be VPN encrypted from the remote location to its destination
3. Each path will provide basic traffic classification such that QoS may be used in the future
4. There will be a dynamic routing protocol for the WAN that will be using mutual authentication between routers
a. This will help prevent route injection from rouge devices that may get connected to the infrastructure
5. All traffic will be transported over encrypted tunnels to the central sites
a. The POS GPRS will have an IPSEC VPN or SSL VPN to the central site
6. The primary link will be the wireless Ethernet and if this fails, then, the traffic will flow over the 3G uplink
7. The wireless Ethernet will have a logical connection towards the central site and another towards the DRS. In the eventuality of failure to reach the central site it will automatically use the backup paths.
8. The logical infrastructure will be a dual rooted hop and spoke configuration
9. The logical dual roots will have logical interconnection among them to help in the synchronization and service exchange
Locations with POS and ATM Machines
The sizing for the router in locations with POS and/or ATM machines has been done to support up to four (4) ATM machines and/or POS . Now, due to possible bandwidth constraints for the wireless backup, the optimum is for a maximum of two (4) ATMs and/or POS.
Any sizing has to consider the bandwidth limitation on the slower link. The diagram in Figure 1, illustrate the general concept of the solution.

Conception générale du réseau
La conception du réseau envisage d’avoir les configurations suivantes :
1. Un chemin primaire et des chemins de sauvegarde vers la Banque Centrale et un Site de Reprise d’Activités (SRA)
2. Chaque chemin sera crypté par un VPN (Réseau Privé Virtuel) de l’emplacement éloigné à sa destination
3. Chaque chemin fournira une classification basique du trafic afin que QoS puisse être utilisé dans le futur
4. Il y aura un protocole dynamique de routage pour réseau étendu (WAN) utilisant des authentifications mutuelles entre les routeurs
a. Ceci préviendra l’injection des routes par des dispositifs rouges qui se connecterait à l’infrastructure
5. L’ensemble du trafic sera transporté par une encapsulation cryptée vers les sites centraux
a. Le POS GPRS aura un IPSEC VPN ou un SSL VPN vers le site central
6. La liaison primaire sera le réseau sans fil Ethernet et si celle-ci échoue le trafic se réorientera vers la liaison terre-satellite 3G
7. Le réseau sans fil Ethernet aura une connexion logique vers le site central et une vers le SRA. Dans l’éventualité où il ne parvient pas à atteindre le site central, il utilisera automatiquement les chemins de sauvegarde
8. L’infrastructure logique aura une configuration à racines duelles de concentrateur à rayons (Hub and spoke)
9. Les racines duelles auront une interconnexion logique entre elles afin d’aider la synchronisation et l’échange de services
Emplacement avec Point de Vente (POS) et DAB (Distributeur Automatique de Billet)
La capacité des routeurs dans des emplacements avec POS ou/et DAB ont été conçus afin de supporter jusqu’à quatre (4) DAB et /ou POS . Mais, dû aux contraintes éventuelles de largeur de bande pour la sauvegarde sans-fil, l’optimum est de deux (4) DAB et /ou POS.
Tout calcul de capacité doit considérer les limites de la largeur de la bande lors d’une liaison plus lente. Le diagramme de la figure 1 illustre le concept général de la solution.
