How technology is changing the future of wine-making (The independent.co.uk, 4 April 2007)
From Nasa's satellites to Napa's infra-red sensors, technology is changing wine-making - and fast. Jamie Goode raises a glass to the latest tricks.
SATELLITE IMAGING
Even within one vineyard, conditions vary. Traditionally, it would take viticulturalists decades of observation to work out how various patches of ground perform. Now there's a new practice that gives growers the benefit of a lifetime's experience in just a few hours. In California, for instance, the huge E&J Gallo and Mondavi wineries use Nasa technology. From satellites and small planes, pictures are taken using various spectra, such as infrared, which reveal exact conditions on the ground.
A tool adapted from the space programme, the Luminar 5030, a handheld spectrometer - analyses the light coming from a grape - and is used to tell when the harvest is perfectly ripe. Coupled with GPS, the information produces a map of yields throughout a vineyard. Both approaches aim to quantify the variation in the vineyard, to identify bits that could be managed better.

PEST CONTROL
In recent years, a lot of attention has focused on organic and biodynamic viticulture, but there's a science-based method of environmentally friendly growing that is gaining ground. It's called integrated pest management, and it involves the use of technology to reduce the need for herbicides and pesticides.
Typically, weather stations in the vineyard feed data back to a computer that predicts when the risk of pests or diseases is highest. Chemicals are then sprayed on when needed.
Special predatory wasps or ladybirds are also used as biological control agents, to keep harmful insect numbers down, and the planting of different sorts of vegetation around vineyards to act as refuge for beneficial insects.
GENETICALLY MODIFIED YEAST
Many different strains of yeast exist, and they can all shape the characteristics of the wine they produce. Some winemakers prefer to ferment their wines with whatever yeast is hanging around the winery (called a "wild-yeast" or "natural" ferment), but many select cultured yeasts to give desired characteristics to their wines. Traditionalists don't like it, claiming that it is too manipulative.
In the past year, the first GM yeast strain has appeared on the market in California, made by First Venture Technologies. No one has owned up to using it yet; there's still a stigma attached. But could this be the future?
OXYGEN TO CONTROL TANNINS
Micro-oxygenation is a technique that introduces a controlled amount of oxygen at specific stages of the winemaking process. It was initially developed in the Madiran region of France to help with their typically tannic, unapproachable wines. Adding tiny bubbles of oxygen via a ceramic diffuser in a tank of just-fermented wine helps the tannins develop favourably. This technique gives winemakers an extra tool to help them shape their wines. Critics maintain that it relies on guesswork and good luck, and if it's used carelessly it can result in wines that taste excessively dry.

REDUCING ALCOHOL CONTENT
Alcohol levels in wine have been rising in recent years. Whether this is a style issue (because of grapes being picked riper to make sweeter wines), or a result of global warming, the wine industry is concerned.
However, techniques exist to remove alcohol from wine. One, reverse osmosis, is a filtration technique that takes out the alcohol from a portion of a particular wine, along with some of the water. Once the alcohol has then been removed from this mixture only the water remains, which can be added back to create a low-alcohol wine.
"Spinning cone" is a different method for achieving the same final goal. Some of the wine is put into a spinning cone that captures the delicate, volatile aroma compounds. These are then stored. The aroma-stripped wine is reprocessed to remove most of the alcohol. The de-alcoholised wine and the flavour are then blended with the bulk of the wine.It sounds horribly interventionist, but proponents say that the wines these techniques produce are often significantly better for having lost a degree or two of alcohol.

IMAGERIE SATELLITE
Même au sein d'un même vignoble, les paramètres varient. De manière traditionnelle, les viticulteurs mettraient des décennies à évaluer la performance de différentes parcelles de terre. Désormais, une nouvelle pratique offre aux viticulteurs le bénéfice de l'expérience de toute une vie, en seulement quelques heures. En Californie par exemple, les gigantesques chais E&J Callo et Mondavi utilisent une technologie empruntée à la NASA. À partir de satellites et de petits avions, des photographies sont prises dans différents spectres, notamment l'infrarouge, qui révèlent les conditions exactes sur le terrain.
Le Luminar 5030, un outil adapté du programme spatial, est un spectromètre portatif qui analyse la lumière renvoyée par un raisin et permet de dire quand le raisin est parfaitement mûr. Associées à un GPS, les informations produisent une cartographie du rendement sur l'ensemble du vignoble. Les deux approches visent à quantifier les variations au niveau du vignoble, et à identifier ce qui pourrait être mieux géré.

LUTTE ANTI-PARASITAIRE
Ces dernières années, la viticulture biologique et biodynamique a fait l'objet d'une grande attention, mais une autre méthode scientifique de culture raisonnée gagne du terrain. Appelée gestion intégrée des parasites, elle utilise la technologie pour réduire l'utilisation d'herbicides et de pesticides.
Typiquement, des stations météo placées dans le vignoble envoient des informations vers un ordinateur qui prédit le moment où le risque d'apparition de parasites ou de maladies est le plus élevé. Des produits chimiques sont alors pulvérisés en cas de besoin.
Certaines guêpes prédatrices ou coccinelles sont également utilisées comme agents de contrôle biologique, pour maintenir la quantité d'insectes nuisibles à un faible niveau, et différentes sortes de plantes sont plantées autour des vignes pour servir de refuge aux insectes utiles.
LEVURE GÉNÉTIQUEMENT MODIFIÉE
Il existe de nombreuses variétés de levures et toutes peuvent modeler les caractéristiques du vin qu'elles produisent. Certains viticulteurs préfèrent laisser fermenter leur vin par la levure qui se trouve naturellement autour du chai (appelée "levure sauvage" ou ferment "naturel"), mais nombreux sont ceux qui choisissent des levures cultivées pour apporter à leur vin les caractéristiques souhaitées. Les traditionalistes refusent cette méthode, qu'ils jugent trop interventionniste.
L'an dernier est apparue sur le marché californien la première variété de levure OGM, produite par First Venture Technologies. Personne n'a encore avoué l'avoir utilisée, car elle porte toujours un lourd stigmate. Et si l'avenir, c'était ça ?
DE L'OXYGÈNE POUR MAîTRISER LES TANINS
La micro-oxygénation est une technique qui consiste à introduire une quantité donnée d'oxygène à différents stades du processus de vinification. Elle a été initialement développée dans la région française de Madiran pour aider à la fabrication de leurs vins inimitables, typiquement tanniques. RÉDUCTION DU TAUX D'ALCOOL
Les taux d'alcool ont augmenté ces dernières années. Que ce soit une question de style (à cause du raisin cueilli plus mûr pour faire des vins plus doux), ou un effet du réchauffement climatique, cela préoccupe l'industrie vinicole.
Pourtant, des techniques existent pour retirer l'alcool du vin. L'osmose inverse est une technique de filtration qui retire l'alcool d'une partie d'un vin donné, en même temps qu'une partie de l'eau. Une fois que l'alcool a ensuite été retiré de ce mélange, il ne reste que l'eau, qui peut être rajoutée au vin pour créer un vin à faible taux d'alcool.
Le procédé de colonne à cônes rotatifs ("Spinning cone") est une autre méthode permettant d'atteindre le même objectif final. Une partie du vin est versée dans une colonne à cônes rotatifs qui capture les composés aromatiques délicats et volatils. Ceux-ci sont alors conservés. Le vin dont on a retiré les arômes est retraité afin d'en retirer la majeure partie de l'alcool. Le vin désalcoolisé et les arômes sont alors mélangés au reste du vin. Cela semble terriblement interventionniste, mais ceux qui proposent cette méthode déclarent que les vins produits par ces techniques sont souvent sensiblement meilleurs grâce à la perte d'un ou deux degrés d'alcool.

ASSEMBLY OF THE XYZ® HEADLIGHT SYSTEM
The XYZ® Headlight system consists of a headband, variable spot module, gown clips and a bifurcated fiber optic cable.
To assemble the headlight, attach the variable spot module (Fig 1) to the headband by sliding the tapered bottom end of the module into the headband (Fig 2) and push the top into the headband (Fig 3) until it makes an audible click.
To attach the fiber optic cable, insert the bifurcated metal fitting into the module (Fig 4a - b) until it clicks into place.
Thread the bifurcated cable on the left and right of the central headband unit (Fig 5) in an over-under pattern as shown.
Continue threading the bifurcated cables on the left and right of the headlight adjustment bracket in an over-under pattern as shown (Fig 6).
The cable can be slid forward or backward to allow more slack for comfort, as needed. To remove the cable from the module, grasp the strain relief in one hand and the module in the other hand and pull the strain relief straight up.
• DO NOT disassemble by grasping the bifurcated cables as damage to the glass fibers may occur.
Next open the headlight assembly fully by pulling the central unit (Fig 7) completely open and opening the circumferential adjustment (Fig 8) fully.
The pad (Fig 9) should be at the front of the headlight.
Place the headlight on your head. The occipital basket should be aligned (Fig 10) as shown.
Grasp the headlight as shown (Fig 11) and push the headlight from front to back until it fits snugly. Adjust the pad front to back, (Fig 12) for a more comfortable fit.
The headlight should then be adjusted circumferentially using the ratchet knob at the rear as shown (Fig 13). The XYZ® headlight is now ready for use. The headlight system comes with two gown clips to relieve the weight of the fiber optic cable from the head. One clip should be attached to the surgical gown or scrubs at, or just below shoulder level (Fig 14).
Be sure to leave enough slack in the cable to allow for freedom of head movement. If the surgeon needs to detach the cable from the lightsource, the second gown clip is used to attach the cable to the gown or scrubs to eliminate the risk of dropping the cable.
The spot size of the light may be adjusted from 20 – 100mm (0.8 – 4 in), based on a 46cm (18 in) working distance, by adjusting the iris (Fig 15). | Translation - French
ASSEMBLAGE DU SYSTÈME DE LAMPE FRONTALE XYZ®
Le système de lampe frontale XYZ® est constitué d’un bandeau, d’un module à spot variable, de pinces à vêtements et d’un câble à fibre optique bifurqué.
Pour assembler la lampe frontale, fixer le module à spot variable (figure 1) au bandeau en faisant glisser l’extrémité inférieure conique du module dans le bandeau (figure 2) et pousser la partie supérieure dans le bandeau (figure 3) jusqu’à entendre un clic.
Pour attacher le câble à fibre optique, insérer le connecteur métallique bifurqué dans le module (figure 4a – b) jusqu’à ce qu’il s’enclenche correctement en émettant un clic.
Faire passer le câble bifurqué sur la gauche et sur la droite de la partie centrale du bandeau dans les attaches de câble prévues à cet effet (figure 5).
Continuer à passer les câbles bifurqués dans les attaches sur la gauche et sur la droite du mécanisme d’ajustement de la lampe frontale, comme l’indique le schéma (figure 6).
Pour un meilleur ajustement et plus de confort, le câble peut être glissé vers l’avant ou vers l’arrière. Pour retirer le câble du module, saisir d’une main le serre-câble près du connecteur et de l’autre main le module, puis les déboîter axialement.
• NE PAS démonter en saisissant les câbles bifurqués, cela pourrait endommager les fibres de verre.
Ouvrir ensuite entièrement l’assemblage du bandeau en tirant sur la partie centrale (figure 7) pour l’ouvrir totalement et en ouvrant entièrement le réglage du tour de tête (figure 8).
Le coussinet (figure 9) doit se trouver vers l’avant de la lampe frontale.
Placer la lampe frontale sur votre tête. Le maintien occipital doit être dans l’alignement comme indiqué sur le schéma (figure 10).
Saisir la lampe frontale comme sur le schéma (figure 11) et la pousser de l’avant vers l’arrière jusqu’à ce qu’elle soit bien en place. Régler la position du coussinet de l’avant vers l’arrière (figure 12) pour un maintien plus confortable.
Le tour de tête du bandeau doit ensuite être ajusté grâce à la molette à cran située à l’arrière (figure 13). La lampe frontale XYZ® est maintenant prête à l’utilisation. Le système de lampe frontale est livré avec deux pinces à vêtement permettant de soulager la tête du poids du câble à fibre optique. Une pince doit être fixée à la blouse ou à la tunique chirurgicale au niveau de l’épaule ou juste en dessous (figure 14).
Assurez-vous de laisser suffisamment de jeu au câble pour permettre la liberté de mouvement de la tête. Si le chirurgien a besoin de détacher le câble de la source lumineuse, la seconde pince à vêtement est utilisée pour fixer le câble à la blouse ou à la tunique et empêcher la chute du câble.
La taille du spot de lumière peut être réglée de 20 à 100 mm (0,8 à 4 pouces), sur la base d’une distance de travail de 46 cm (18 pouces), en réglant l’iris (figure 15). |
