Nonetheless, we want to make sure that the Russian authorities realise that all of these establishments operate under the FSEP/HACCP program of CFIA and are being audited under the new Compliance Verification System. They are also eligible to export to numerous countries in the world and are submitted to testing on bacteria such as E.coli and Salmonella on carcasses in order to comply with a lot of foreign countries’ requirements including Russia.

All our plants have a complete and extensive sanitation program in place including a daily pre-operational verification before the operation start early in the morning. We also monitor the cleanliness of the food contact surfaces in all our establishments to make sure we supply high quality meat that complies with the most stringent microbiological acceptability criteria for fresh meat. Summary results are shown in the attached table. It can be seen from table 3 that all our plants are over 85% of compliance level for the surfaces or equipment swabbing with one that is at >94%. With a standard set at 103 UFC/ 25 cm2 for the surface or equipment evaluation, it represents excellent results that indicate that food contact surfaces are not contaminated with high amounts of bacteria. These food contact results also reflect directly what we observe in table 4 for the analysis of the product themselves.

All in all, our salmonella and E. coli results are excellent, meaning that we avoid having pathogens in our operations. The fact that our compliance level for surfaces results are a bit lower than our compliance level for products results indicates that we do a good job at detecting the contamination on the surfaces so it doesn’t end up in the products. I also want to remind you that every time a non-compliant result is obtained; we do an inquiry and a root cause analysis to make sure the problem is addressed correctly and we take the appropriate measures to improve our operation or sanitation procedures.
Our slaughter plants are fully equipped to have a continuous flow of operation that guarantee the best meat quality possible by reducing downtime and making sure there is no time-temperature abuse during our operations. We did a compliance level assessment to determine if there were any non-compliance or deviations that could explain those results and we didn’t find any. We also double checked our records to evaluate if there would have had any outstanding CAR issued from CFIA and it’s not the case either.

В целом, анализы на кишечную палочку и сальмонеллу дают очень хорошие результаты, что является доказательством наших усилий по предотвращению появления патогенных организмов в нашей мясопродукции. Тот факт, что результаты исследований продукции лучше, чем результаты исследования поверхностей, контактирующих с продуктами, свидетельствует о том, что наши усилия приносят свои плоды, и вредные бактерии не попадают в готовую продукцию. Мне также хочется отметить, что при выявлении любого несоответствия нормам мы ищем основную причину произошедшего и проводим её тщательный анализ. Наши скотобойни хорошо оснащены и позволяют обеспечить непрерывный технологический процесс. При этом высокое качество нашей продукции достигается без изменения температурного режима или продолжительности обработки. Мы произвели оценку уровня соответствия в целях выявления любых случаев несоответствия или отступления от нормативов, что могло бы объяснить эти результаты, но ничего подобного выявлено не было. Мы также дважды проверили нашу документацию на предмет пропущенного запроса об устранении несоответствия от Канадского Агентства по контролю за качеством пищевых продуктов и также ничего подобного не обнаружили.

This article describes the technical rationale in switching from radiography to automated ultrasonic testing (AUT). There are both technical and practical reasons, and AUT is much better suited to modern analysis methods and materials. In particular, two new technologies have become commercial in the lat decade or so: Time-Of-Flight Diffraction (TOFD) and phased arrays. ASME Code Case 2235, the most globally used AUT code, can be approved for either of these two techniques, or any other AUT technique that passes the Performance Demonstration required, and all the other specifications. This article shows that a variety of equipment can fulfill the Code Case, and gives an example of an AUT inspection, which saves considerable time (and hence, cost), while performing a better quality inspection.

Для этого существуют технические и практические причины и, кроме того, АУЗК в полной мере соответствует современным методам анализа результатов контроля и применяется для контроля качества современных материалов. В частности, в последние 10 лет большую популярность приобрели два новых метода: дифракционно-временной метод (TOFD) и фазированные решётки.
