Our surroundings, especially our homes, contribute significantly to our mental and physical well-being. Many people are moving into condominiums that offer conveniences of residential living in heavily urbanized sectors. However the trade-off for this prized convenience is that condominium owners must deal with space and economic limitations. Consequently, to maximize the utility and function of their space, many condos are taking inspiration from European and Asian design.

Design Challenge: Arkyin works as a manager at a leading technology firm in downtown Toronto while Diana works in finance on Bay St. They want a condominium that is close to work, the Asian shopping malls and their families, who live in uptown Toronto.

MintoMidtown, a homebuilder with over 50 years of experience, has launched Quantum2, located at Yonge and Eglinton. Quantum2 also happens to be perfect for Arkyin and Diana as it is a short distance from their respective workplaces; and close to the highway and subway. The proximity to the transportation routes allows the couple quick access to their families and shopping.

Arkyin and Diana asked interior designers Elaine Cecconi and Anna Simone of Cecconi Simone Inc. to come up with a “modern design” for their 720 square foot 1 bedroom plus den condo with a 55 square foot balcony. They stipulated that their home should exhibit the refined sensibility of Japanese culture. This was of particular importance to the couple since they both enjoy Japanese culture, especially its rich history and delightful cuisine.

Design Solution: Drawing inspiration from Japanese architecture and its ideologies, Cecconi Simone then fused it with North American sensibilities to arrive at an innovative design solution. As a result, the solution is provocative, engaging, and multifunctional, as spaces that transform, furniture that moves and converts, and rooms that can shift from formal to informal.

“The feeling that each space gives you is important; here, clean and minimal spaces are personalized by decorations and artifacts, a kind of undertone to the modern world”, Simone advises. Simone also points out that it is important that your furniture, books, clothes and all other decorations provide some insight to your personality, because “Design is about self and how you portray self to the world.”

The French referendum on the European Constitution this past May exposed ideological cleavages among the French in their beliefs not only about Europe, but about the very foundations of society and the economy. Behind the critiques directed at the EU as “not being social enough,” lurked an image of the Union as a trap that had forced France to bend to the fateful disciplines of the market, and deprived the nation’s leaders of their ability to realize important social goals. This image was evident not only on the extremes of right and left, and in traditionally nationalist Gaullist circles, but also among most socialist voters, who decided to spurn the party leadership’s pro-European stance.

With the disappearance of the communist world and the failure of its collectivist policies, one would think that this debate had been resolved in favor of the reformist vision. But the surprise of the last few months is that an important part of the Socialist electorate and party leaders back radical change.

Moreover, a substantial portion of the broader anti-liberal left, composed of communists, ecologists, union activists, and adherents of the movement Attac accuse the reformists of subordinating themselves to liberal globalization and advocate, instead, a radical transformation of society and the economy.

One might suspect the influence of French political traditions which, on the right as much as on the left, always prefer purity of principle to messy compromise. Add to this the congenital French mistrust of liberalism – indeed, French is one of the rare languages in which the word “liberalism” has a pejorative connotation – joined to an equally deep-rooted perception of the state (again, on both the right and the left) as the defender of the general interest par excellence. While pragmatism has come to dominate northern Europe’s socialist parties since the 1930’s – and, after the 1957 Congress of Bad Godesberg, the Germany’s Social Democratic Party (SPD) as well – a preference for revolutionary ideology has always prevailed, at least on the rhetorical level, among French socialists.

What is now needed is a more modest debate about how to reconcile the deficiencies of the market with the demands of solidarity. In particular where Asian investors intend to invest into or through Europe, then the Hong Kong – Luxembourg route can be an interesting option. Lee Kum Kee Recipe: Lemongrass Pork Fillet

For a minority group of people, this winter has been a blessing because the snowfall has been minimal and there have been high temperatures that have reached new records for this time of year. However, most want a ‘white’ Christmas full of fluffy flakes and sparkling snow. The image of snow automatically leads to images of Christmas which celebrates family, presents and most importantly, food.

Many people over the holiday will probably overindulge in food and drinks. It is not uncommon for people to add on ‘winter weight’ or ‘extra insulation’ during this busy and magical time. After all, the month of December is full of holiday parties for work, friends and family. Due to the harsh Canadian winters, many people can justify the extra weight as a means to ‘stay warm’.

Homes are always dressed up to reflect the festive mood of the season. Christmas trees are full of blinking coloured lights and shiny ornaments. Hallways and fireplaces are adorned with stockings, candles and candy canes. The kitchen table is the gathering place to talk with loved ones and friends while enjoying delicious holiday fare. Roast turkey, chicken or beef is a fine holiday favourite, but his year, why not try something different for the main course?

Pork is an excellent alternative to the usually holiday food. Usually, people will steam pork with salty eggs on top or mix it with Chinese vegetables. Pork is also typically found in a stir-fry with vegetables and other ingredients. Finally, wontons are another popular food made with pork.

For this issue, the always creative Chef Joseph Ho has prepared an interesting and sumptuous Christmas dish for us – Lemongrass Pork Fillet. In this issue, Chef Joseph Ho wows us by preparing the pork filet using world famous Lee Kum Kee sauces to cook a tasty dish. We wish everyone a delightful Christmas feast with this appetizing and yummy dish!

Lemongrass Pork Fillet

Ingredients:One piece of pork fillet, approx. 3/4 pounds;
One apple, chopped in lices;
1 stalk of Lemongrass, grounded to one teaspoon;
1 stalk of red onion, thinly sliced;
One lemon, for decoration use.

Marinade: 1 tablespoon of Lee Kum Kee Lemongrass sauce;
1 teaspoon of Lee Kum Kee Premium Soy sauce;
1 teaspoon of Lee Kum Kee Oyster Flavoured sauce;
1 tablespoon of sugar;
1 teaspoon of corn starch;
1 tablespoon of cooking oil;
¼ cup of water.

Method:
1) Wash and clean the pork fillet. Season with all marinade ingredients and let stand for 30 minutes.
2) Cut the apple in half, remove the core, and slice into thin pieces (1/4 thick). Slice the red onion to shredded pieces.
3) Heat a heavy based frying pan. Add the marinated pork fillet to the pan. Fry the pork fillets on both sides until golden yellow. Remove fillet from the pan and allow juices to settle for a few minutes.
4) Add apple slices and shredded red onion to the pan and fry for a few minutes.
5) Add pork fillet to the pan again and cook with ingredients. Afterwards, put the pork fillet into an oven and cook for 12 minutes.
6) Take the pork fillet out from the oven. Cut it into slices (3/4 thick) and serve 1-2 slices per person. Pour in the cooked apple and red onion to the pork slices. Once finished, add the lemon and lemon grass garnish to the edge of the serving dish, and enjoy!

Micronutrient Deficiency Diseases. In addition to PEM, micronutrient deficiencies play a key role in nutrition-related morbidity and mortality. Following are common micronutrient deficiencies.

• Vitamin A Deficiency (VAD). The most common deficiency syndrome in displaced populations is caused by a lack of vitamin A. Vitamin A deficiency is also known as xerophthalmia. It can cause night blindness in early stages and permanent eye damage and blindness in later stages. Famine-affected and displaced populations often have low levels of dietary vitamin A intake before experiencing famine or displacement, and therefore may have very low vitamin A reserves. Furthermore, the typical rations provided in large-scale relief efforts lack vitamin A, putting these populations at high risk. In addition, some diarrheal diseases rapidly deplete vitamin A stores. Depleted vitamin A stores need to be adequately replenished during recovery from these diseases to prevent the disease from becoming worse. Vitamin A is stored in the liver, and after initial treatment, supplemental doses can be as much as 3 months apart.

• Vitamin C Deficiency (Scurvy). Although scurvy rarely occurs in stable populations in developing countries, many outbreaks have occurred in displaced and famine-affected populations, primarily because of inadequate vitamin C in rations. Scurvy is marked by spongy gums, loosening of the teeth, and a bleeding into the skin and mucous membranes. Fortification of foods with vitamin C is problematic because vitamin C is unstable and cannot be stored in the body. The best solution is to provide a variety of fresh foods either by including them in the general ration or by promoting access to local markets. In addition, local cultivation of vitamin C-containing foods should be encouraged. Patients with clinical scurvy should be treated with 250 mg of oral vitamin C two times a week for 3 weeks.

• Niacin Deficiency (Pellagra). Pellagra is caused by a severe deficiency of biologically available niacin in the diet. It is endemic where people eat a maize-based diet with little protein-rich food. It is marked by dermatitis, gastrointestinal disorders, and central nervous system problems. Treatment of maize flour with lime (which converts niacin into a biologically available form of niacin) and the inclusion of beans, peanuts (ground nuts), or fortified cereals in daily rations increases the total intake of available niacin and will prevent the development of pellagra.

• Anemia. Anemia is caused by a lack of hemoglobin and indicates a lack of iron in the diet. Diets that are lacking in vitamin C or are high in fiber reduce iron absorption. It is marked by a lack of energy. Severe anemia in a displaced population can be a major cause of mortality for young children and pregnant women. Treatment for anemia includes a daily administration of iron/foliate tablets and vitamin C. Supplementary feeding of high-risk groups with corn-soya-milk (CSM) will also help reduce the likelihood of anemia (CSM contains 18 g iron per 100 g).

Thiamine Deficiency (Beriberi). Beriberi is caused by an inability to assimilate thiamine. It occurs where people have to exist on a starchy staple food such as cassava or polished white rice. It is marked by inflammatory or degenerative changes of the nerves, digestive system, and heart. Sources of thiamine include dried peas and beans and whole-grain cereals. One major problem is that thiamine is destroyed during cooking.
