When I set up a profile either here on ProZ or any freelancer site, they often ask for a portfolio. I'm not exactly sure how to go about this because, of course, I don't own the copyright to anything I do and there's the danger of giving out proprietary information. I'm fairly new as a freelancer and I'm trying to become established. I would love to show off my previous work except for the aforementioned concerns. Any thoughts?

You could anonymize your sample translations by XXXing out the customer's name. And you do own the copyright unless you've signed an agreement assigning it to the customer.

I think it's very important to use your portfolio as a marketing tool. It says far more about you than any résumé.

You should not, in any shape and form, publish material for which you have signed a confidentiality agreement.

Deleting names doesn't anonymize a document for an attentive and knowledgeable reader.

Public domain material Nov 14, 2013

If you specialise in law, there is plenty of scope for translating sections of material found on the Internet - legislation, whatever you fancy.

You could also ask a client's permission to use material you have translated for them. If it is not sensitive, they may be happy to let you use it. This must be a direct client, of course, not an agency.

In extension of this, you could ask whoever owns the rights to any piece of text you want to use - a press release, for instance, or anything that was intended for publication and not confidential.

Send them the translation and use the chance for marketing...

Yeah, public domain, like Wiki texts, some of which are quite good. Just remember to include courtesy notes in the exact form the GPL or other licence provides.
