How can I add field values when there is more than one TM?

In Studio 2009, I open a new document to translate (not creating a project, just "new document"). I assign a TM and the file opens in the Editor window. Then, to assign fields (I like to add an translation order no. and sometimes client's name) I go to project settings>language pairs>update and I fill in the field values. Great, no problem.
But if I want to assign one TM for updating and another one for reference (no update) then when I go to assign fields in my project settings, nothing is available and I can't enter the values I want to.
Isn't there any way that I can add my field values to the main TM that I'm using and updating? Thanks for any ideas.
