Can I set individual due dates for files in a Studio project?

Am new to Studio 2009/2011 and am still evaluating whether or not it actually speeds up my translation process. One thing that I can't seem to find/figure out is how to set individual due dates for files in a project?

I have monthly projects for a client, from whom I continuously receive individual files with different due times. So I want to create a December 2011 project, for instance, and then add individual files as they come along, and manually set their individual due dates and delivery dates, so that I can easily see which ones are still due, which ones are delivered and which ones are half done. Ideally, I would also like to see the files in the order that they are added, or at least be able to choose how to sort them in the Files editor window (obviously, sorting them alphabetically is not an option, as they all have long incomprehensible names...).

Using Freelance 2007 it was easy, as I maintained my own file structure to separate the In/Out files, and then used a spreadsheet to manually keep track of due dates/delivery etc. Now Studio is supposed to replace all that project management for me, but I never seem to be able to access that data or input anything manually. So, in other words, most of the layouts in File Editor don't really help, as the ones I want to use (My tasks/Sent tasks) are not available.

Am I doing something wrong when I create these projects?

You can set individual due dates for language pairs in the project.
However, setting a different due date per file is not possible.
