I am new at using SDL Trados and have close to a million questions. But the first one is about creating projects with a custom template. The project I'm working on has documents in both English and Spanish, which need to be translated into Spanish and English, respectively. Is it possible to create a project template with two source languages? I haven't found a way to do that and am wondering whether it's possible at all.

I have the SDL Trados version 2009 Freelancer and... NO, it is not possible to use 2 source languages.
You have to create one project per pair.
