Update: I have (one more time...) reinstalled Studio 2011 SP2R (ver 3046), managed to get back to Java 6 update 14, and although there is "no entry model" (maybe there never was one? I can't remember), I can add terms both in Studio and Multiterm (changes made in one are reflected in the other, I have checked). Don't ask me why, but it works.
I have followed Miguel's advice and disabled the automatic updated in Studio, Multiterm and Java. Fingers crossed!
