I am working with a Microsoft Access file (for the first time in my life) and can't find how to spellcheck and count the number of words.

is found under Tools.

As far as I know there is no word count function in Access. You can copy the content into MSWord and do the count there or get a dedicated counting software. There are some good ones available for download on the Internet, many with a free trial period.
