I'm thinking of translating this as "loose ice-cream" - it's the stuff that comes in tubs and is scooped into cups or cones, rather than individually packaged ice-creams like Cornetto-style cones.

One site has "mezzo chilo di gelato sfuso".
We call it be weight, but I don't think it's acceptable in good English. Maybe sold by weight?

Explanation:
Just off the top of my head, that's how I'd ask for a serving of "gelato sfuso" in the States.
A shop would sell "ice cream by the scoop", so you'd ask for a scoop of chocolate and a scoop of vanilla.
