Persian (Farsi) term or phrase: چشمان آبي رنگش به رنگ آبي گلها بود
Greetings,

I'm fine with the first part of this sentence, but I'm not quite sure how the “abi”s and the “rang”s all fit together in the second part.

موهاي طلايي اش در حلقه هاي زيبا کنار گوشهاي ظريفش جمع شده بود چشمان آبي رنگش به رنگ آبي گلها بود

All the best, and many thanks,

Her blue-colored eyes were the blue color of flowers.
Explanation:
Hi Simon,

The adjective "آبی رنگ" here is exactly the English "blue-colored" and "به رنگ آبی بودن" means exactly "to be (the color of) blue." As you see, we can omit "the color of" in English, but you may keep it to resemble the original tone, perhaps.

You may also translate "گلها" as "roses" instead of "flowers."

Her blue-colored eyes were of the color of flowers

Explanation:
Dear Simon,
As Mr. Emami says: "آبی رنگ" here is exactly "blue-colored" in English but as you might have considered yet, in literary language resemblence is usually shown using "of" instead of "like", "similar to" or "the same as".
