This is from a recipe for a pastry, which is summarized at the beginning as follows:

I think lionesa is puff pastry, and petisu sounds a bit like patissier, but that may be a coincidence. I''ve also found this by googling, which may help:

Thanks very much. I'm not 100% sure of this, but it seems the most likely answer as it's apparently a type of dough rather than a cake. I think it may come from pâte de choux rather than petits choux,

agree  Lisa McCarthy: I think 'cream puff' or 'eclair' are correct but which word you use depends on what they look like - round or oblong?

I believe petisu is a Spanish spelling of the French Petits choux.

PETIT CHOU o CHOU: petisu. Pastelito de masa de buñuelos que se cuece en el horno en lugar de freírse y se rellena con crema pastelera o chantilly. Éclairs are oblong and cream puffs are round.
The vast majority of images for "lionesa" are round and more images for "petisú" are oblong than round, so I would so with cream puffs to translate "lionesa" and éclairs for "petisú".

I do think what is being described is either of these two, not just the puff pastry. Notice your text says "RELLENO de crema", filled with, not topped or coated with rum chocolate cream - with cocoa crumb topping (or topped with cocoa crumbs).

Explanation:
As a pastry chef and translator, this is absolutely an eclair, and made from pate choux, or choux paste, not puff pastry. You might stretch it to a cream puff or profiterole, also made from the same dough.
