Is this possibly a typographical error? As far as I can tell, "арат" means a cattle herder, which doesn't fit in this context at all.

В долине Нила засолялись плодородные почвы. Крестьяне пускали на них самотеком пресную речную воду, она растворяла соли, насыщалась ими и стекала обратно в реку. Такие же промывки, так называемые «араты», делались и при обработке засоленных земель в дореволюционном Азербайджане.
